The TARTE TARTIN STORY
We love food deeply because it makes memories of special moments. The dish and the moment become entwined with our deepest emotions.
Tarte Tatin is named after the French sisters who made it the signature dish of their hotel south of Paris in the 1880s. Legend says one of them made a mistake in the kitchen, cooking the apples in butter for too long. That mistake led to one of those simple dishes that are unforgettable – and it’s my favourite thing to create and eat.
Why? It’s the way every element of flavour complements the next, from the flakey, caramelised, handmade puff pastry, to the buttery apples topped with a decadent, warm, rich caramel sauce to the velvety ice cream that cuts through the dish’s warmth.
But the thing I love most about Tarte Tatin is the way it makes you want the next bite before you have even finished the one you’re eating. I hope every time you have a Tarte Tatin the memory stays with you.
