PASSIONFRUIT MARINATED TUNA STORY

It’s a memorable New Year’s Eve. Celebrated chef Rick Stein is in Mollymook, a place he’s come to love (he has a beach house around the corner). He’s familiar with the high-quality local tuna, fresh from Ulladulla Harbour. And he’s about to create one of Bannister’s signature dishes: Passionfruit Marinated Tuna. 

The result is a harmonious fusion of fresh seafood and vibrant flavours that celebrates the abundance of local tuna and showcases its silky texture, rich colour and unbeatable flavour. It’s a hit that night … and still is today.

Marinated in a blend of passionfruit, lime, and a touch of chili, the dish offers a delightful balance of sweet and tangy notes that perfectly complement the tender texture of the fish. Washed down with a 2023 Brokenwood Semillon Sauvignon Blanc from the Hunter Valley, it’s sheer perfection.
